STRAWBERRY MUFFINS
A couple of days ago, I've promised my husband and son to bake more often. So far, i've been pretty good! Missed one weekend but i know i'm forgiven ;)
I've tried an easy strawberry muffins recipe. They turned one great and delicious! I do like quick and easy recipes, however I can't wait to get myself a Kitchen Aid mixer and try more "complicated" ones.
So here's what you'll need:
1/4 cup of vegetal oil
1/2 cup of milk
1 egg
The juice and zest of one lemon
1 3/4 cup of all purpose flour ( you can also go with 1 cup of all purpose flour + 3/4 cup of whole wheat)
1/2 tsp. teaspoon salt
1 tsp. of baking powder
1/2 cup of sugar
1/4 cup packed brown sugar
1 cup of fresh chopped strawberries ( or blueberries )
Preheat oven at 375 ° F (190 ° C).
In a bowl , lightly beat the oil , milk, egg and lemon juice.
In another bowl, combine the lemon zest, all purpose flour, wheat flour , salt, baking powder , sugar and brown sugar. Add the strawberries to the flour mixture. Add the oil mixture and stir.
Fill the muffin cups up to 3/4
Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean . Let them cool off for 10 minutes before turning them out.
